Oven-Roasted Potato Wedges

Crispy roasted potatoes are the ideal side to serve alongside perfectly cooked steak. Dried rosemary is more potent than fresh, so if you'd like to substitute, use half a teaspoon.

Ingredients

  • 2 small yellow-fleshed potatoes (about 300 g total) cut in 3/4-inch (2 cm) wedges
  • 2 teaspoons olive oil
  • 1/4 teaspoon dried rosemary
  • pinch each salt and pepper

Method

On lightly greased rimmed baking sheet, toss together potatoes, oil, rosemary, salt and pepper. Roast in 425°F (220°C) oven, turning once, until potatoes are golden and tender, about 25 minutes.
