Party Spinach Salad with Snow Peas and Almonds

This selection from our Green Days collection of salad recipes in the June issue of Canadian Living is great for parties — you can prepare all the ingredients early, then toss them together at serving time. For a simple weeknight supper, simply cut the recipe in half.

Ingredients

  • 1 bag (10 oz/284 g) spinach trimmed and torn
  • 1 cup (250 ml) snow pea trimmed and thinly sliced
  • 1 can sliced water chestnut drained and rinsed
  • 1 sweet red pepper thinly sliced
  • 1/2 cup (250 ml) slivered almonds
  • 1 green onion thinly sliced diagonally
Ginger Dressing:
  • 1/4 cup (50 ml) vegetable oil
  • 2 tbsp (25 ml) soy sauce
  • 2 tbsp (25 ml) rice vinegar
  • 2 cloves garlic minced
  • 1 tsp (5 ml) gingerroot
  • 1/4 tsp (1 ml) pepper

Method

Ginger Dressing:
In jar, shake together oil, soy sauce, vinegar, garlic, ginger and pepper. Set aside. (Make-ahead: Refrigerate for up to 1 week.)

Arrange spinach in large bowl. Top with snow peas, water chestnuts and red pepper. (Make-ahead: Cover bowl with damp towel and plastic wrap. Refrigerate for up to 2 hours.)

Add dressing; toss to coat. Garnish with almonds and green onion.
