White tea is a mild tea that comes from the same plant as green tea but is picked when the buds are still covered in fine silver hair and not fully opened.

- 5 green tea
- 5 white tea
- 4 cups sliced peeled peaches fresh or thawed
- 1/3 cup granulated sugar
MethodIn large heatproof measure or bowl, steep tea in 8 cups (2 L) boiling water for 4 minutes. Discard bags.
Meanwhile, in large saucepan, bring peaches, sugar and 1 cup (250 mL) water to boil. Reduce heat to medium-low; simmer, stirring, until very soft, about 12 minutes. Add to tea; let cool to room temperature, about 30 minutes. Refrigerate until cold, about 2 hours.
Strain through cheesecloth-lined sieve into pitcher, pressing solids only gently so beverage remains clear. Serve with ice cubes. Makes 8 cups (2 L), or 8 servings.
