Peachy Pancakes

Breakfast is a treat with golden, light and healthy pancakes with chunks of glorious fresh peaches.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 3/4 cups milk
  • 2 tablespoons butter melted
  • 2 eggs
  • 1 1/4 cup finely chopped peeled peach
  • vegetable oil for skillet

Method

In large bowl, stir together all-purpose and whole wheat flours, sugar, baking soda, nutmeg and salt. Whisk yogurt, milk, butter and eggs; pour over dry ingredients and stir just until moistened.

Heat skillet or griddle over medium heat; brush with oil. Using 1/4 cup 50 mL) batter for each pancake, pour into skillet; sprinkle 1 tbsp (15 mL) peaches over each. Cook for about 2 minutes or until bottom is golden and bubbles break on top but do not fill in. Turn and cook for about 2 minutes or until bottom is golden.
