Rice cooks in the time it takes to make the main course. Here are two ways to cook it until tender and make enough for four servings.

In saucepan, bring water and salt to boil; add rice. Reduce heat, cover and simmer for 20 minutes. Stir in fresh parsley and butter.
In saucepan, melt butter over medium heat. Cook onion, garlic, dried herbs, salt and pepper for 5 minutes. Add rice; stir for 1 minute to coat. Add chicken or vegetable stock; bring to boil. Reduce heat, cover and simmer for 20 minutes. If desired, add frozen vegetables about 15 minutes after adding rice.
