This classic sandwich gets a boost with a twist of lemon and a sprinkle of chopped olives. The sandwiches are best assembled just before eating, so the bread doesn't get soggy. Just pack your fillings and bread separately. If you don't have bread on hand, serve the tuna mixture with crackers and vegetables for dipping.

Ingredients

  • 1 can (170 g) water-packed solid white tuna drained and flaked
  • 2 tablespoons light mayonnaise
  • 4 black olives pitted and finely chopped
  • 1 green onion chopped
  • 2 teaspoons lemon juice
  • 1/4 teaspoon pepper
  • 4 slices multigrain bread
  • 10 thin slices cucumbers
  • 1 cup chopped romaine or leaf lettuce

Method

In bowl, stir together tuna, mayonnaise, olives, green onion, lemon juice and pepper.

Make-ahead
: Refrigerate in airtight container for up to 2 days.

Top 2 of the bread slices with tuna mixture, cucumber and lettuce; top with remaining bread.
