Pink Lady Salad

Ingredients

  • 1/4 cup vegetabIe oil
  • 1/4 cup cranberry cocktail
  • 1/2 teaspoon each salt and pepper
  • 4 cups packed torn leaf lettuce
  • 2 cups radishes thinly sliced
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped dried cranberry

Method

In large bowl, whisk together cranberry cocktail, vegetable oil, salt and pepper. Add lettuce, radishes, red onion and cranberries. Toss to coat.
