Charm a crowd with a big batch of chili. A side of tortillas chips and lime wedges adds a little crunch and citrus zing.

- 1 tablespoon canola oil
- 1 lb (450 g) ground pork
- 4 cloves of garlic minced
- 1 bag Arctic Gardens chili vegetable mix
- 2 cans red kidney beans drained and rinsed
- 1 can crushed tomatoes
- 1 can diced tomatoes
- 1/2 cup tomato paste
- 4 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons coriander seeds ground
- salt and freshly ground pepper
MethodIn a large pot, heat oil at medium-high heat and brown ground pork. Add garlic and vegetables. Cook for 4 to 5 minutes.
Add the remaining ingredients and season generously. Cover and let simmer for 30 minutes. Stir occasionally.
Remove the cover and simmer uncovered for another 15 minutes.
Correct seasoning and garnish with fresh cilantro, sour cream and grated cheddar.
