Potato Bean Toss

Ingredients

  • 1 red skinned potato
  • 1 cup frozen green beans
  • 1 teaspoon extra-virgin olive oil
  • pinch each salt and pepper
  • 1 teaspoon chopped fresh coriander if desired
  • 1 teaspoon chopped parsley if desired

Method

Slice potato into finger-size strips. Cover and cook in saucepan of boiling salted water until tender, about 8 minutes. Add green beans and heat through; drain and return to pot.

Add olive oil, salt and pepper; heat through. Add coriander, if desired.
