This is a recipe from my friend, Rick, who called it Potatoes Schwartzee, who probably got it from someone else. Whatever you call it, this is fabulous comfort food!

- 2 lbs square cut hash browns
- 500 mL sour cream
- 2 10 oz cream of mushroom soup
- 1/2 cup melted butter
- 1 small onion chopped finely
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- 2 cups grated Cheddar cheese
MethodIn large bowl, combine all ingredients, except cheeses. (Using your hands is the easiest method, although you may wish to let the frozen hashbrowns sit at room temperature for a 1/2 hour or so).
Scrape into a greased casserole large enough to hold mixture. Sprinkle cheeses over top and bake at 350 degrees for 1 1/2 hours or until cheese is bubbly and slightly browned and knife is warm when inserted in centre.
