Classic English potted cheese is the perfect make-ahead appetizer for a busy party season. If you like, split it between two pots to give as gifts.

Ingredients

  • 12 oz aged Cheddar cheese 375 g cubed (4 cups/1 L) and at room temperature
  • 1/3 cup unsalted butter 75 mL softened
  • 1/4 cup tawny port
  • 1/2 teaspoon crumbled dried sage
  • 1/4 teaspoon ground mace or pinch nutmeg
  • pinch salt
  • pinch cayenne pepper

Method

In food processor, blend together Cheddar cheese, butter, Port, sage, mace, salt and cayenne pepper until smooth, scraping down side of bowl often.

Scrape into pot, smooth top. Cover with plastic wrap and refrigerate for up to 2 weeks. Bring to room temperature to serve.
