Potted Chipotle Cheddar

A pot of this spread is indispensable during the holidays, especially for drop-ins. Wary of hot peppers — Just replace the chipotle with roasted red pepper.

Ingredients

  • 2 cups shredded old Cheddar cheese
  • 1/3 cup butter softened
  • 2 tablespoons tequila
  • 2 tablespoons whipped cream
  • 2 tablespoons minced chipotle peppers
  • 1 tablespoon minced fresh coriander

Method

In bowl, beat together cheese, butter and tequila until fairly smooth; stir in chipotle pepper. Pack into terrine or jar. (Make-ahead: Cover and refrigerate for up to 4 days.) Sprinkle with coriander.
