Quesadilla Bites

This popular menu item goes perfectly with any kind of soup.

Ingredients

  • 8 oz lean ground beef (optional)
  • 8 tortillas
  • 3/4 cups shredded Cheddar cheese
  • 2 tablespoons thinly sliced green onions

Method

If using beef, cook in skillet until no longer pink; drain and set aside.

Place 4 small tortillas on baking sheet; sprinkle each evenly with cheese and green onion. Divide beef (if using) over top. Top with remaining tortillas.

Bake in 400°F (200°C) oven, turning once, until browned and cheese melts, about 10 minutes. Cut each into 4 wedges.
