Depending on the size of tortilla used this dish can be served as wedges on a plate or small sqares of finger bites. Dipping bowls of sour creme and salsa are a must. All Qty are aprox as the size of tortilla will determine what you will need. Try not to make them to thick as they will be too messy to eat as finger food.

Ingredients

  • 2 small(6-8 tortillas
  • 2 ounce Monterey Jack cheese
  • 1/3 cup mixed red and yellow peppers
  • 2 tablespoons chopped green onions
  • 1/4 cup diced chicken
  • 1/4 cup diced shrimp
  • 1 tablespoon olive oil

Method

-Finely dice peppers and onion -grate cheese -Dice chicken or shrimp Brush tortilla lightly with olive oil, with oil side down brown in frying pan until lightly browned while adding peppers, onion and cheese (optional chichen or shrimp as well) Put another tortilla on top and brush lighly with olive oil.Turn over and brown lightly. Transfer to a cookie sheet and warm in 350 oven until cheese has melted. Cut into wedges or sqares... Serve warm with salsa and sour cream
