This soup is so easy, you can throw it together in minutes, even at the last second on a busy morning. Opening up a container filled with these delicious, steaming flavours is like getting a big, warm hug from home. Look for packages of fresh tortellini in the refrigerated cases at the grocery store.

  • Portion size 1 serving

Ingredients

  • 4 cups sodium-reduced chicken broth
  • 1 plum tomato halved, seeded and diced
  • 3/4 cups fresh cheese-filled tortellini
  • 1/2 teaspoon lemon juice
  • 3 baguette (each scant 1/4 inch/0.5 cm thick)
  • 1 teaspoon grated parmesan cheese

Method

In saucepan, bring broth, 1/2 cup water and tomato to boil; reduce heat and simmer for 3 minutes. Return to boil; stir in tortellini. Boil until tortellini are floating and tender, about 3 minutes.

Remove from heat; stir in lemon juice. Pack soup in vacuum bottle, and baguette and cheese in air- tight containers. Sprinkle Parmesan cheese over soup; eat with baguette slices.

Change it up:
Cheese Tortellini in Fresh Tomato sauce

Omit chicken broth and lemon juice. Cook tortellini according to package directions; drain. toss together tortellini; plum tomato, halved, seeded and diced; 2 tsp extra-virgin olive oil; 1 small clove garlic, minced; and 1/4 tsp dried italian herb seasoning. Pack tortellini mixture, baguette and Parmesan cheese as directed.
