Quick Chicken Casserole

I was stuck on what to make for dinner last night so took an inventory of what I had available and came up with this - it's easy and fabulous!

  • 4 skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 cup Minute Rice
  • 1 cup apple juice
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper


Mix in bowl the chicken soup, apple juice and rice. Stir until well blended, and put in bottom of large casserole dish.

Place sliced peppers over top of above mixture. Put chicken breasts on top and season with salt and pepper.

Cover with casserole lid or foil and bake at 350 degrees F for 1 hour, remove lid the last 10 minutes to brown chicken.
