Perfect for any party or summer barbecue, these green beans make fantastic garnishes for cocktails (think Caesars!). You can also add them to any sandwich, burger, cheese platter or charcuterie tray. Or just enjoy them straight out of the jar.

Ingredients

  • 450 g green beans
  • 1 1/2 cup water
  • 1 1/4 cup vinegar
  • 3 tablespoons granulated sugar
  • 1 tablespoon pickling salt
  • 2 teaspoons mustard seeds
  • 1 hot chili pepper halved lengthwise and seeded

Method

Cut beans into 3 1/2-inch (9 cm) lengths, discarding stem ends.

In saucepan, bring water, vinegar, sugar, salt and mustard seeds to boil, stirring until sugar and salt dissolve. Add beans; cook, stirring occasionally, just until tender, about 8 minutes. Add hot pepper. Let cool completely.

Stand beans in two 2-cup (500 mL) canning jars; add pepper half to each jar. Fill with vinegar mixture; cover with lid. Let stand for at least 1 hour before serving.

Make-ahead: Refrigerate for up to 3 weeks.
