Quick Plum Chutney

Ingredients

  • 1 1/4 lb plum (about 5)
  • 1/4 cup granulated sugar
  • 1/4 cup cider vinegar
  • 2 whole star anise
  • 1 pinch pepper

Method

Pit plums; cut into 1-inch (2.5 cm) chunks to make about 3 cups (750 mL). In saucepan, bring sugar, vinegar, star anise and pepper to boil over medium heat; stir in plums. Reduce heat, cover and simmer for 5 minutes; let cool. (Make-ahead: Refrigerate in airtight container for up to 2 days; bring to room temperature to serve.)
