Ingredients

  • 1 tablespoon olive oil
  • 1 half sweet red pepper chopped
  • 2 cups packed baby spinach
  • 1 cup cooked quinoa
  • 2 cloves garlic minced
  • 1 teaspoon sodium-reduced soy sauce
  • 1 teaspoon Asian chili garlic paste (such as sambal oelek)

Method

In skillet, heat oil over medium-high heat; stir-fry red pepper until just beginning to soften, about 5 minutes. Stir in spinach, quinoa, garlic, soy sauce and chili-garlic paste; cook until heated through, about 3 minutes.
