Red Cabbage and Radish Slaw

This flavourful slaw is a nice alternative to the more classic green cabbage version. Add the radishes just before serving, so they keep their colour and stay crisp.

Ingredients

  • 4 teaspoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon granulated sugar
  • 1 clove garlic minced
  • pinch each salt and pepper
  • 1/4 cup extra-virgin olive oil
  • 2 carrots
  • 6 cups finely shredded red cabbage
  • 2 tablespoons chopped fresh parsley
  • 1 cup thinly sliced radish

Method

In large bowl, whisk together vinegar, mustard, sugar, garlic, salt and pepper until sugar is dissolved, about 1 minute. Whisk in oil until combined.

With vegetable peeler, slice carrots into paper-thin strips. Add to bowl along with cabbage and parsley; toss to coat. Cover and refrigerate for 2 hours. (Make-ahead: Refrigerate for up to 24 hours.) Stir in radishes.
