This hardy casserole will fill you up, give you energy for those chilly days in autumn.

  • 1 can lentils (any colour)
  • 3 onions
  • 1 cup white cheddar cheese
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 tablespoons dry basil
  • 2 tablespoons fresh parsley
  • 1 teaspoon fresh mint
  • 1/4 cup water


Mix egg, water, basil, parsley and mint toghether. Add 3/4 cup of cheese than mix with lentil and put in casserole. Cover with the left over cheese and cover the cheese with the bread crumbs. Bake in oven for 30 min at 300F. For the last 5 min, put under broiler until bread crumbs are golden brown.
