What Canadians call red kidney beans, Jamaicans know as "peas."

- 1/2 cup chopped bacon
- 4 green onions chopped
- 1 clove garlic minced
- 1 sweet green pepper chopped
- 3 cups chicken stock
- 1 can unsweetened coconut milk
- 1 can red kidney bean drained and rinsed
- 1 Scotch bonnet pepper
- 1/2 teaspoon dried thyme
- 2 cups parboiled rice
In large heavy pot, cook bacon over medium heat until crisp, about 4 minutes; drain off fat. Add green onions, garlic and green pepper; cook for 3 minutes. Add stock, coconut milk, beans, Scotch bonnet pepper and thyme; bring to boil. Stir in rice and return to boil; cover, reduce heat to low and cook for about 25 minutes or until rice is tender and liquid absorbed. Remove whole pepper; fluff with fork and season with salt to taste.
