Asparagus has a sweet, grassy flavour that is heightened when it's roasted. Toss it with lemon zest and juice to add a burst of freshness without dulling the nice green colour. Cut any leftover roasted asparagus into 1-inch (2.5 cm) pieces and add to your favourite salad or omelette.

Ingredients

  • 1 lb asparagus trimmed
  • 2 teaspoons olive oil
  • 1 teaspoon grated lemon zest
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons lemon juice
  • 8 shavings Parmesan cheese (about 17 g)

Method

On baking sheet, sprinkle asparagus with oil, lemon zest, salt and pepper; toss to coat. Roast in 425?F (220?C) oven, shaking pan halfway through, until tender-crisp, about 12 minutes.

Toss with lemon juice. Arrange on platter; top with Parmesan cheese.
