A quick soak before baking ensures succulent, tender asparagus. When serving, sprinkle more Parmesan attractively over top, if desired.

- 1/2 lb trimmed asparagus
- 2 teaspoons melted butter
- 2 tablespoons freshly grated Parmesan cheese
- 2 teaspoons lemon juice
In 11- x 7-inch (2 L) baking dish, cover asparagus with water and soak for 10 minutes; drain and pat dry. Wipe dish dry. In dish, toss asparagus with butter, Parmesan, and salt and pepper to taste; arrange in one layer. Bake in 400°F (200°C) oven for 15 to 20 minutes or until tender-crisp. Sprinkle with lemon juice. Serve immediately.
