Roasted Cherry Tomatoes For Two

Ingredients

  • 2 cups cherry tomatoes halved
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 teaspoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried basil
  • 1 pinch hot pepper flakes

Method

In 8-inch (2 L) square metal cake pan, toss together cherry tomatoes, olive oil, vinegar, salt, basil and hot pepper flakes.

Roast in 400°F (200°C) oven until shrivelled, about 25 minutes.
