Roast beans 30 minutes or until tender and browned, stirring once.

Ingredients

  • 2 lbs green beans
  • 1/4 teaspoon coarse pepper
  • 4 olive oil
  • 3/4 salt
  • 1 pint grape tomato each halved
  • 2 red onions halved and thinly sliced
  • 2 garlic cloves crushed with press
  • 2 balsamic vinegar
  • 1 cup fresh basil leaf sliced

Method

Preheat oven to 425 degrees F. In large (17 X 11 1/2) jelly roll pan, toss green beans with pepper, 2 T. oil, and 1/2 t. salt. Roast beans 30 minutes or until tender and browned, stirring once. Stir in tomatoes: roast 5 minutes longer. Meanwhile, in 12 inch skillet, heat 2 T. oil over medium heat. Add onions and 1/4 T. salt. Cook 20 minutes or until onions are tender and browned, stirring often. Reduce heat to medium-low. Stir in vinegar; remove from heat. Toss onions and basil with beans; transfer to serving bowl. serve warm or at room temperature
