Ingredients

  • 4 sweet potatoes (3 lb/1.5 kg)
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon each salt and pepper

Method

Scrub sweet potatoes; cut each lengthwise into 8 wedges. In bowl, toss together potatoes, vegetable oil, salt and pepper. Roast on large rimmed baking sheet in 400°F (200°C) oven, turning once, until tender, about 30 minutes.
