This dressing can be made ahead and refrigerated. Just give it a good whisk to re-emulsify before serving.

Ingredients

  • 6 cups chopped romaine lettuce
  • 2 cups shredded radicchio lettuce
  • 1 sweet onion thinly sliced
  • 1/2 cup crumbled feta cheese
Lemon Caper Dressing:
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons minced sweet onions
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons vegetabIe oil
  • 2 tablespoons lemon juice
  • 1 teaspoon drained rinsed capers
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon granulated sugar

Method

Lemon Caper Dressing: In small food processor or blender, pur?e together parsley, onion, olive oil, vegetable oil, lemon juice, capers, salt, pepper and sugar until fairly smooth and creamy.

In salad bowl, combine romaine, radicchio and onion; sprinkle with cheese. Toss with dressing just before serving.
