Saucy Tomato Poached Eggs

Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 zucchini sliced
  • 2 cloves of garlic sliced
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can tomato
  • 6 eggs

Method

In large skillet, heat oil over medium-high heat; cook onion, zucchini, garlic, Italian seasoning, salt and pepper, stirring often, for 5 minutes or until softened.

Add tomatoes, breaking up with spoon; cook for 20 minutes or until thickened and most of the liquid is evaporated.

Make 6 wells in sauce; gently break egg into each. Cover and cook for 5 minutes or until whites are set, or until desired doneness.
