My family have enjoyed this dish for over 40 years, vegetables & meat all in one dish.

- 2 inches potatoes
- 2 inches carrots
- 1 onion
- 1 sprinkle salt
- 1/4 cup raw rice
- 1 can peas (drain, reserve liquid)
- 1 sprinkle ground pepper
- 1 can condensed tomato soup
- 1 lb mild Italian sausage or Oktoberfest sausages
- 1/2 cup reserve water or more if needed
MethodYou will need a 10-12 cup deep casserole dish with lid.
Layer potatoes, carrots & onion in casserole in that order. Sprinkle with salt. Add rice & peas, sprinkle with pepper. Add tomato soup diluted with liquid from peas, Add enough water to barely come to the top of vegetables. Place sausage on top. Cook covered at 350º for 1 hour Turn meat & cook uncovered for up to 1 hour. Serve with your own favorite bread & a salad. Enjoy!
