This was a childhood favorite that carried on to the next generation. My children loved it also and my daughter now makes it. It is an economical and easy meal, which was important as there were seven of us. Use the basic recipe or use your favorite sausage (I use breakfast or pork)or vegetables (I like bell peppers) to make it your own favorite meal! I sometimes add italian spice to change it up.

Cook rice as directed on package. While rice is cooking brown the sausages and dice onions. Grate the cheese. Spray a large casserole dish with cooking spray such as Pam. Layer half of the rice on bottom of casserole. Spread the onions on rice then layer the sausages on top. Pour one can of the stewed tomatoes over breaking up the tomatoes. Layer the rest of the rice over this and then repeat the stewed tomato layer. Spread the grated cheese on top. Bake in a 350 degree oven for 1 to 1.5 hrs.
