Fresh cold-water shrimp salad on a slice of crisp, cool cucumber makes a refreshing summer hors d'oeuvre.

Ingredients

  • 6 oz cooked cold-water salad shrimp chopped
  • 1 avocado pitted, peeled and diced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons light mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 English cucumber cut diagonally in 24 slices

Method

In bowl, stir together shrimp, avocado, parsley, mayonnaise, lemon juice, salt and pepper.

Place about 1 tbsp on each cucumber slice.
