Slow Cooker Asian Turkey Meatball and Noodle Soup

Ingredients

  • 1 carrots sliced
  • 1 rib celery sliced
  • 2 1/2 cups sodium-reduced chicken broth
  • 2 1/2 cups water
  • 2 cups finely chopped napa cabbage
  • 1/2 cup frozen peas
  • 1 green onion thinly sliced
  • 1/2 cup extra-fine egg noodles
  • 2 teaspoons sesame oil
Turkey Meatballs:
  • 1 egg beaten
  • 1 green onion minced
  • 1 clove garlic minced
  • 1 tablespoon light soy sauce
  • 1 tablespoon sodium-reduced soy sauce
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons sesame oil
  • 1/4 teaspoon pepper
  • 1 lb ground turkey
  • 2 tablespoons cornstarch

Method

Turkey Meatballs: In bowl, combine egg, onion, garlic, soy sauce, ginger, sesame oil and pepper. Mix in turkey and cornstarch.

Shape by rounded 1 tbsp into balls. In slow cooker, arrange carrot and celery on bottom; top with meatballs. Add chicken broth and water.

Cover and cook on low until flavourful, 6 to 8 hours.

Transfer meatballs to plate. Strain broth, reserving liquid. Discard vegetables.

Return meatballs and broth to slow cooker; add cabbage, peas and onion. Cook, covered, on high until cabbage is tender, 20 minutes.

Meanwhile, in large pot of boiling salted water, cook noodles until tender but firm, about 4 minutes. Drain and stir into soup along with sesame oil.
