Slow Cooker Baked Beans With Apples

This no-added-fat quick version of baked beans uses only a bit of molasses and the natural sweetness of apples, so the recipe scores only about half the fat and calories of traditional baked beans.

Ingredients

  • 3 (19 oz/540 ml each) pinto beans drained and rinsed
  • 3 (19 oz/540 ml each) navy beans drained and rinsed
  • 2 cups chopped dried apples
  • 1 can crushed tomatoes
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup apple cider
  • 3 tablespoons fancy molasses
  • 2 tablespoons cider vinegar
  • 1 tablespoon dry mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 apple peeled, cored and diced

Method

In slow cooker, combine beans, dried apples, tomatoes, onion, garlic, apple cider, molasses, cider vinegar, mustard, salt and pepper.

Cover and cook on low until bubbly and thickened enough to scoop, 6 to 8 hours.

Stir in diced apple.
