Slow Cooker Beef and Tomato Curry

This family-friendly curry has just the right amount of heat for everyone to enjoy. If you prefer things on the spicier side, try medium curry paste.

Ingredients

  • 1 lb lean ground beef
  • 1 lb potato peeled and cubed
  • 2 onions diced
  • 2 cloves garlic minced
  • 1 tablespoon minced fresh ginger
  • 3/4 teaspoons salt
  • 1 can diced tomatoes
  • 1/2 cup sodium-reduced beef broth
  • 1/4 cup mild curry paste
  • 2 tablespoons tomato paste
  • 1/4 cup all-purpose flour
  • 1 cup frozen green peas

Method

In slow cooker, combine beef, potatoes, onions, garlic, ginger and salt. Stir in tomatoes, beef broth, curry paste and tomato paste.

Cover and cook on low until potatoes are tender, 6 to 8 hours.

Whisk flour with 1/4 cup water until smooth; whisk into slow cooker. Stir in peas. Cook, covered, on high until slightly thickened and peas are tender, about 15 minutes.
