Slow Cooker Chicken and Lentil Stew

This Indian-style stew is a great change from the same old chicken dishes. Garam masala, a blend of ground spices (of which there are many combinations), is available in supermarkets.

Ingredients

  • 1 lb boneless skinless chicken thigh quartered
  • 1 1/4 cup green lentils
  • 1 1/4 cup brown lentils
  • 2 carrots chopped
  • 2 onions chopped
  • 3 cloves garlic minced
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cup sodium-reduced chicken broth

Method

In slow cooker, combine chicken, lentils, carrots, onions, garlic, ginger, garam masala, cumin, salt and pepper. Stir in chicken broth and 1 cup water.

Cover and cook on low until juices run clear when chicken is pierced and lentils are tender, about 6 hours.
