Slow Cooker Ginger Carrot and Lentil Soup

This smooth soup is quick and economical to make, pretty to look at and delicious to eat.

Ingredients

  • 1 cup red lentils
  • 1 lb carrots (about 5), peeled and sliced
  • 1 onion chopped
  • 8 thin slices fresh ginger
  • 2 cloves garlic minced
  • 1 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups water
  • 2 cups vegetable broth
Garnish:
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/2 cup low-fat plain yogurt

Method

In slow cooker, combine lentils, carrots, onion, ginger, garlic, cumin, salt, pepper; pour in water and broth.

Cover and cook on low until vegetables and lentils are tender, 6 to 8 hours.

Using immersion blender, or in stand blender in batches, purée soup until smooth.

Garnish: Stir cilantro into yogurt; swirl or dollop onto each serving of soup.
