Free up your stove top and oven with this festive dish made in the slow cooker. Be sure to cut the sweet potatoes to the appropriate thickness so they maintain their shape when cooked. If you like, garnish the dish with chopped fresh sage.

Ingredients

  • 1/3 cup orange juice
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon grainy mustard
  • 1 teaspoon crumbled dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 15 kg sweet potato peeled and cut in 3/4-inch thick rounds

Method

In large bowl, whisk together orange juice, garlic, oil, mustard, sage, salt and pepper. Add sweet potatoes and toss gently to coat. Scrape into slow cooker.

Cover and cook on low until sweet potatoes are tender, about 4 hours.
