Slow Cooker Polynesian Pork Ribs

Pineapple juice adds a hint of sweetness to these flavourful ribs, which are inspired by the lands of white sands and warm breezes. Find unsweetened pineapple juice concentrate in the freezer section of the grocery store.

Ingredients

  • 2 tablespoons minced garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon ground coriander
  • 1 teaspoon five-spice powder
  • 1/4 teaspoon pepper
  • 2 lbs pork side ribs
  • 2 lbs pork back ribs
  • 1/4 cup thawed unsweetened pineapple juice concentrate
  • 2 tablespoons liquid honey
  • 4 teaspoons dry mustard
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons rice vinegar

Method

Stir together garlic, soy sauce, coriander, five-spice powder and pepper; rub all over ribs. Place in slow cooker.

Whisk together pineapple juice concentrate, honey, mustard, Worcestershire sauce, vinegar and 1/2 cup water; pour over ribs.

Cover and cook on low until ribs are tender, 6 to 7 hours.

Transfer ribs to serving platter; cut into 2-rib portions. Skim fat from liquid in slow cooker; strain sauce and serve with ribs.
