Slow Cooker Pork Loin With Prunes and Port

Inspired by the Douro region of Portugal, this pork loin slow cooks with prunes, port and chicken broth to yield a delicious and smooth gravy.

Ingredients

  • 10 pitted prunes halved
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 3 lbs boneless pork loin centre roast
  • 1 cup sodium-reduced chicken broth
  • 1/4 cup ruby port
  • 1/4 cup tawny port

Method

In slow cooker, combine prunes, garlic, paprika and salt; add pork roast. Pour in broth and port.

Cover and cook on low until pork is tender, about 8 hours.

Transfer pork to serving platter; tent with foil and let stand for 10 minutes before thinly slicing.

Strain sauce through fine sieve; skim any fat from sauce. Serve with pork.
