Slow Cooker Saucy Stout Barbecue Beef Ribs

These hearty and hefty beef ribs slow cook in a rich delicious sauce. Serve the sauce in bowls on the side for guests to dip into or pour over the ribs as they prefer.

Ingredients

  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 1/3 cup bottled strained tomatoes (passata)
  • 1 cup Stout beer
  • 1/4 cup fancy molasses
  • 2 tablespoons chili powder
  • 2 tablespoons cider vinegar
  • 1 tablespoon packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dry mustard
  • 1/2 teaspoon pepper
  • 1 pinch cinnamon
  • 6 lbs beef grilling back ribs cut in 2-rib portions

Method

In blender, purée together onion, garlic, strained tomatoes, beer, molasses, chili powder, vinegar, brown sugar, salt, cumin, mustard, pepper and cinnamon until smooth. Pour into slow cooker. Add beef ribs, turning to coat.

Cover and cook on low until meat is tender, 6 to 8 hours.

Transfer ribs to serving platter. Skim fat from liquid in slow cooker; serve sauce with ribs.
