Slow Cooker Spicy Sausage and Artichoke Sauce

Toss this versatile hearty sauce with any short pasta that can hold it, such as rigatoni, penne rigate or pasta shells. If you prefer a mild taste, substitute sweet or regular Italian sausages for the hot.

Ingredients

  • 4 hot Italian sausages (450 g total) casings removed
  • 1 onion chopped
  • 1 1/2 cup bottled strained tomatoes (passata)
  • 2 jars (6 oz/170 ml each) marinated artichoke hearts drained and rinsed
  • 1/4 cup dry red wine
  • 2 tablespoons tomato paste
  • 2 cloves garlic minced
  • 1/2 teaspoon dried Italian herb seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon hot pepper flakes
  • 1 pinch granulated sugar
  • 1/4 cup chopped fresh parsley

Method

In slow cooker, combine sausages, onion, strained tomatoes, artichoke hearts, wine, tomato paste, garlic, herb seasoning, salt, pepper, hot pepper flakes and sugar, breaking up sausages with wooden spoon.

Cover and cook on low for 6 to 8 hours. Stir in parsley.
