In food processor, pulse together salmon, artichoke hearts, onion, mayonnaise, sour cream, capers, Dijon mustard, lemon zest and pepper until blended yet still chunky. Stir in chives. Scrape into serving bowl. (Make-ahead: Cover and refrigerate for up to 3 days.)
