Whether it is lunch for one, or a crowd, this simply delicious and easy anytime lunch is uniquely satisfying. One pleasure I allow myself every day is a good lunch, energizing but not too filling, as well as quick, totable or make-ahead. This is one of my favourites. My friends think so too!

Cut the avocado in half, peel it and remove the seed. Cut each half into long thin strips. Slice the Gouda thinly as well. Take one tortilla and spread half of the pesto evenly across the whole surface leaving approximately 1/2" along the edge. Onto one half of the tortilla lay half of the avocado slices in one layer. Top them with half of the smoked Gouda and fold the other side over making a half moon. Repeat with the other tortilla. Place them on a grill pan, on medium heat(you want to do this gently) for 2-3 minutes each side until crispy and cheese is melted. Cool slightly, then cut each into three wedges.
