Wine, juice and fruit create a refreshing dessert. If you omit the whipped cream, it's a great choice for those who are lactose intolerant.

In small saucepan, sprinkle gelatin over cold water; let stand for 5 minutes. Warm over medium-low heat until melted.

Meanwhile, in saucepan, heat wine, cranberry cocktail, sugar and honey over medium heat, stirring often, until steaming. Stir in gelatin mixture.

Using funnel, pour 1/3 cup (75 mL) each into eight 1-cup (250 mL) martini or widemouth glasses or bowls. Refrigerate until set, about 3 hours.

Meanwhile, transfer remaining wine mixture to small bowl; let stand for 2 hours. Transfer to refrigerator; chill until consistency of egg whites, about 1 hour.

Meanwhile, cut away rind and pith of oranges; cut between membrane and pulp to release sections. Reserve 8 sections and 8 raspberries for garnish. Spoon remaining oranges and raspberries over jelled mixture in glasses. Spoon remaining wine mixture over top. Refrigerate until set, about 1 hour. (Make-ahead: Cover and refrigerate for up to 24 hours.)

In bowl, whip cream (if using); spoon onto each glass. Garnish with reserved oranges and raspberries and mint sprigs.
