- 3 English cucumbers
- 1/2 teaspoon salt
- 2 tablespoons lime juice
- 1 teaspoon minced seeded hot red pepper
- 1/2 teaspoon granulated sugar
- pinch pepper
- 1/4 cup chopped fresh coriander
MethodPeel and seed cucumbers; slice crosswise into 1/4-inch (5 mm) thick slices. Place in colander set over bowl; sprinkle with salt. Let stand for 30 minutes. Drain and gently squeeze out liquid.
In bowl, toss together cucumbers, lime juice, hot pepper, sugar and pepper; cover and refrigerate for 1 hour. (Make-ahead: Refrigerate for up to 24 hours.) Stir in coriander.
