Ingredients

Dressing:
  • 1/2 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 3 tablespoons extra virgin olive oil
  • 1 pinch dried thyme
  • 1 teaspoon each salt and pepper or more to taste
Salad:
  • 6 cups baby spinach
  • 3 apples peeled, cored and sliced
  • 100 g Cheddar cheese cubed
  • 4 slices bacon cooked and crumbled

Method

Combine all dressing ingredients.

Arrange spinach on 4 plates, fan apples and cheese cubes over spinach, top with dressing, then top with crumbled bacon.
