Spinach Salad

Ingredients

  • 6 cups torn trimmed spinach
  • 4 mushrooms sliced
  • 4 radishes chopped
  • 1/2 cup bean sprouts
  • 2 tablespoons olive oil
  • 2 tablespoons light mayonnaise
  • 2 tablespoons wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon granulated sugar
  • 1 pinch pepper

Method

In bowl, toss together spinach, mushrooms, radishes, and bean sprouts.

Whisk together olive oil, light mayonnaise, wine vinegar, Dijon mustard, salt, sugar and pepper.

Toss with spinach mixture.
