Apple Honey Lime Vinaigrette:
- 1 111 g cup Mott's Fruitsations Unsweetened Apple fruit snack
- 1/4 cup vegetable oil
- 1 tablespoon honey
- 8 stalks asparagus trimmed, blanched and chopped
- 4 cups lettuce torn
- 1 avocado sliced thinly
- 1/4 red onion sliced thinly
- 1 can water-packed tuna drained
- 1/4 cup pumpkin seed toasted
- 1/4 cup sunflower seed toasted
MethodApple Honey Lime Vinaigrette: In a bowl, mix together the apple sauce (Mott's Fruitsations), vegetable oil, lime and honey.
Salad: Pour boiling water over asparagus spears and let stand for 2-3 minutes. Drain and plunge asparagus into ice cold water to stop the cooking. Pat dry. Place lettuce on a large platter or in a bowl; top with avocado, onion, asparagus and tuna.
Just before serving, drizzle the vinaigrette (on top of the salad) to taste and top with pumpkin or sunflower seeds. Serve immediately.
