Stracciatella Soup with Noodles

In Italian, stracci means rags, which the eggs form in the soup. Instead of the egg noodles, you can use any type of small or broken pasta, such as spaghetti, stellini, tubetti, ditali or pastina.

Ingredients

  • 6 cups chicken stock
  • 6 cups vegetable stock
  • 1 cup fine egg noodles
  • 1 cup chopped fresh asparagus
  • 1 cup chopped broccoli
  • 1 cup chopped snow pea
  • 1 cup chopped frozen peas
  • 4 eggs
  • 1/4 cup grated Parmesan cheese
  • 1 pinch grated nutmeg

Method

In saucepan, bring chicken stock to boil. Add noodles and asparagus; cook just until noodles are tender, about 5 minutes.

Meanwhile, in bowl, whisk together eggs, Parmesan cheese and nutmeg; slowly pour into stock mixture, stirring constantly. Reduce heat and simmer for 3 minutes.
